Laura’s chocolate cheesecake

We’d heard a lot of good things about Tea and Tarts WI in West Yorkshire; they’ve got their own running club, put on a hands-down-cool public lecture evening, and their January meeting, titled ‘Pasties and Panties’, was geared around jazzing up smalls with some burlesque-inspired tassels and frilly bits.

So you can imagine our delight when we received an email from one of its members, Laura Merriman who, after a friendly online nudge from a couple of friends on Facebook, decided to share her culinary story with us. After just one read of her recipe, and the strands of personal resonance that run through its evolution, we were hooked.

At the foundation of Laura’s story (made from crushed biscuits in this case), is a cherished family recipe for chocolate cheesecake that, over the past 20 years or so, has become a firm favourite in the family’s baking repertoire. When Laura was first inspired to launch her own baking career in 2012, the recipe served as a meaningful catalyst for which she could hang her idea on.

We can’t tell you the whole story here and now, but we can vouch for the recipe’s absolute deliciousness, along with the many creative variations on flavour Laura has knocked up on her one-woman mission to bring great, homemade cheesecake to the Yorkshire masses.

On visiting Laura and meeting her mum, dad, sister and two adorable little girls at their home in Huddersfield, we were given a first hand glimpse into the life and loves of a WI member with ambition by the bucketload. Needless to say, Tea and Tarts WI are cheering her along every step of the way.
